'Tis the season to be grateful...

Ahhh....It's all over and it's finally time to exhale and bask in the holiday cheer.
We had a lovely, albeit hectic, Christmas time dashing from Christmas parties to family lunches. 


As you can see, Logan enjoyed his first Xmas. He spent the morning rolling about in the wrapping paper but was well and truly sick of his Mumma snapping pictures. Lulu didn't know where to start. She's hit the technological age of 12 and got Sims Medieval and a family Wii (great second hand bargain buy...woohoo!) Hubbs got the new Skyrim game and is now thoroughly entrenched literally in another world and me....new camera (finally one that works!) and latest season of Californication.


Too many days spent on the road, at someones house and the CONSTANT packing and unpacking of the car! So today we spent the whole day just hanging out, enjoying our new shiny toys and eating leftovers with fresh bread rolls YUM : ) 


I did some baking today to use up some spotty bananas and thought I would share my yummo recipe. It freezes and defrosts well so its great for this time of year for when friends drop by and you are unprepared.


Banana Bread
You need: 

·          Melted Butter to grease
     265g (1 3/4 cups) self-raising flour
·         40g (1/4 cup) plain flour
·         1 tsp ground cinnamon
·         140g (2/3 cup, firmly packed) brown sugar
·         125ml (1/2 cup) milk
·         2 eggs, lightly whisked
·         50g butter, melted, cooled
·         2 overripe medium bananas, mashed
·         Chocolate chips if you like

Method
1.    Preheat oven to 180°C. Brush a loaf pan with melted butter to lightly grease. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.
2.    Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre. Place the milk, eggs, melted butter and banana in a medium bowl, and stir until well combined. Add the banana mixture to the flour mixture and stir until just combined. Spoon the mixture into the prepared pan and smooth the surface.
3.    Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean. Remove from oven and set aside in the pan for 5 minutes. Turn onto a wire rack to cool completely. Cut into slices to serve.

I cook it then cut it up and freeze it in plastic lunch bags. To reheat, I spread with a little butter and pan fry for a minute each side or you can be good and just defrost it and eat.


My other quick fix for when friends drop in is scones. Super quick and easy to make and I usually have the ingredients in the cupboard. This recipe makes 6 big scones so double the recipe if you have more guests.
Here it is....


Scones
You need:
3 cups Self Raising flour
1 tbs Caster Sugar
80grams butter
1 cup milk


Combine using a knife to mix-No hands or they will get tough!!!
Gently shape into circles and nestle 6 together so they almost touch
Bake at 220 for 10-12 mins
Cool slightly on a rack then wrap in tea towel and serve warm with jam and whipped cream.
